One pot oil free vegan recipe with white beans mushroom and pineapple.

I would like to share a very soothing one pot oil free vegan recipe which has all the necessary nutrients like fibre, carbohydrate and protein.

Without any kind of animal product and it is very time friendly recipe.

So  let’s begin with the


Any kind of beans of your choice but I prefer white beans or great northern beans  200 grams.

Cornmeal 2 tablespoons.

Any kind of mushroom 200 grams.(quarterly diced)

One can of diced pineapples soaked in its own juice.

Two potatoes quarterly diced

Coriander/ cilantro (handful)

Black Pepper powder half teaspoon

Chilli Powder half teaspoon. Add more if you like it more spicy or skip it if you don’t like spicy

Salt to your taste


First prepare the beans. If you are using canned beans try to wash under running water to get rid of the excess sodium and set it aside , but say you are using raw beans which needs to be boiled  in a deep saucepan, under high heat and gradually to medium heat when it starts boiling.

After 15 minutes of boiling put all the diced mushroom and the potatoes which will also add some starch in the same saucepan where it will cook along with the beans. Also add all the spices and the cornmeal which will work as a thickening agent and also add a nice smell to the dish.

It will take around 30 minutes to get the beans in right consistency, do not boil too much or it will get mushy

Reduce the heat to low.  

Finally add the coriander/cilantro and the can of pineapple and simmer for 5 minutes. Do not cook more than 5 minutes after adding the pineapple otherwise it will get blend in and there will be no bite to it, and you are done for a hearty meal.

You can serve this oil free one pot vegan dish warm with any kind of grains you like.
